Ingredients
- 4 hard-boiled eggs
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 tablespoons vegetable oil1 can (14 oz) crushed tomatoes
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions:
- Heat oil in a pot and sauté onions, garlic, and ginger until softened. Add bell peppers and cook until slightly tender.
- Stir in tomatoes, paprika, cayenne (if using), salt, and pepper. Simmer for 15 minutes.
- Gently add the hard-boiled eggs to the stew. Simmer for an additional 5 minutes to warm them through.
- Garnish with cilantro and serve with rice or bread.
